Whip It Up Wednesday: Pioneer Woman's Restaurant-Style Salsa

Well, the Super Bowl festivities came and went and now we are trying to loose those extra few pounds that were gained from all the delicious treats we had. On Sunday we went over to our friends house to watch the game and we prepared some yummy treats. We made Jen's Texas Queso, cookies that will be featured next week and this to die for salsa by the wonderful Ree Drummond aka The Pioneer Woman.  
Who doesn't love a great salsa? There are some that just don't have the right amount of flavor no matter what you do to it. This one, we've gotta say, meets and exceeds our expectations. I did link to the recipe on her site above, but wanted to share with you what we did in order to "doctor" it up a bit, because you know, David wants things perfect!
Restaurant-Style Salsa 
One 28-ounce can whole tomatoes with juice *drain the juice 
Two 10-ounce cans Rotel Dice Tomatoes and Green Chilies 
1/2 cup of chopped onion. *her recipe called for 1/4 cup 
1 jalapeno *use 1/2 jalapeno if you don't want it too strong.  
2 garlic cloves, minced *her recipe only called for 1. If you've been around here for a while, you know that we love garlic! 
1/4 teaspoon sugar 
1/2 teaspoon salt *her recipe called for 1/4 tsp. 
1/4 teaspoon ground cumin 
Juice of half a lime 
1/2 cup of cilantro
We opted to use our Blendtec blender and not the food processor after a HUGE flood of tomatoe juice came out of the it. Not fun! Hence the reason you should drain the tomatoes first. You can use a regular blender if you won't have one of these.  
Add all of the ingredients in the order listed above.  
Pulse the salsa a few times in the Blentec and you are ready to go!
This salsa is so good that we had already ran out of the leftovers from Sunday so David made another batch last night. Move over Pace Picante Sauce, this is our new favorite!
