Whip It Up Wednesday: Molasses Cookies

Okay okay okay! Please forgive us for not posting any Whip It Up Wednesday's for the past year. I know, it's so bad. We've been super busy! I promise to get better at posting these and to be a better blogger. It was my birthday a few days ago, so I've turned over some new leaves. In honor of my friend Kelli's birthday today (she has always loved this feature on the blog) we thought it would be fun to bring WIUW back to life!
Last night, David came home from work with a recipe in hand and said, "these cookies are really good! I had them at work, and I'm going to make them tonight!" I didn't want to get in the cook's way, so I let him take over the kitchen (because that is never a problem) and I cleaned up the dishes this morning. I sent my friend Amy home with one of the cookies today, and while speaking to my Mama this afternoon, she also shared with me that Molasses cookies were her Mom's most favorite cookies.
Molasses Cookies
1 cup granulated sugar
3/4 cup butter, at room temperature
1 egg
3 Tbs. molasses
2 cups of flour
1 tsp. baking soda
1 1/2 tsp. ground ginger
1 tsp. cinnamon
1/2 tsp. each salt, ground cloves, ground nutmeg
1 cup powdered sugar
1 tsp. lemon juice.
1. Preheat oven to 350 degrees. In a large bowl, cream 1 cup granulated sugar with butter until light and fluffy, about 3 minutes. Mix in egg and molasses. (David used our handy dandy mixer for all of this)
2. In a medium bowl, stir together flour, baking soda and spices. Add butter to mixture and blend well.
3. Fill a shallow bowl with granulated sugar. Break off walnut sized pieces of dough (use a cookie scoop); roll balls in sugar. Arrange on greased cookie sheets and bake until golden brown, about 10 minutes. Transfer to cooling racks.
4. Meanwhile, make glaze: Combine powdered sugar with 1 Tbs. water and stir until smooth, then stir in lemon juice. Drizzle glaze over cookies.
They are delicious, and it is mandatory that you have a cold glass of milk with them.
