Checking In, Vol. XI, Cooking!

Well, I made it! Leaving APU last week was bittersweet, but it felt really good to move on to this next phase of my life. David could already see a reduction in my stress this past weekend, which is GREAT! Here's to more regular Checking In Posts!  
 
Reading: Cookbooks!!!! All afternoon on Sunday, I poured over a ton of our cookbooks picking out recipes to make for David. If you haven't heard, now it's my turn to do the cooking since I am staying home now. He has been doing a lot of the cooking since we got married, so now it is my turn. He LOVES to cook, so we will see if he ever wants to take over again. Maybe I will let him on the weekends. I am planning on creating a weekly menu with the recipes so I only have to go to the grocery store once. I'll let you know how that works. I can assure you that there will be a Whip It Up Wednesday post from here on out. Promise!  
 
Enjoying: The the soreness that comes from a GREAT workout. Today I walked for 45 min. on the incline treadmill, burned 700 calories, then I started back on my weight lifting regimen.  
 
Watching (ed): A lot of random things on TV lately. Nothing too deal breaking.  
 
Thinking about: My 101 in 1001 list that I am about to publish and start working on. It's crazy how many things I want/need to do. 
 
Looking forward to: Losing the weight I have packed on over the past 11 years. Let's see how that added up: Sit down job, happily married, two degrees and starting a business will do that to ya.  
 
Thankful for: Once again, I am thankful for my husband who has helped me achieve this dream. 
 
Listening to: One Republic / Waking Up. Favorite song is "The Good Life" 
Above you can see just a few of our cookbooks, and the recipes I have marked. We LOVE The Pioneer Woman Cooks book. Ree is awesome! Just need to figure out some low cal options. Years ago, I was a Southern Living consultant, hence the large amount of their cookbooks in my possession.
