Whip It Up Wednesday: Oatmeal Chocolate Chip Crisps

When David and I got married, one of the wedding gifts we received was an awesome cookbook with 1001 Cookie Recipes. We've made a number of the delicious recipes and found the perfect one for Super Bowl Sunday at our friends house. These were a huge hit!
Oatmeal & Chocolate Chip Crisps 
 
Ingredients 
 
1 1/4 cups all-purpose flour 
1/2 teaspoon baking powder 
1/2 teaspoon baking soda 
1/2 teaspoon salt 
1 cup vegetable shortening 
1/4 cup granulated sugar 
1 cup packed light brown sugar 
2 large eggs 
1/4 teaspoon milk 
1 teaspoon vanilla extract 
3 cups rolled oats 
1 cup (6 ounces) chocolate chips (see Baking notes) *I actually added 1 1/2 cups for some extra flavor. 
 
*For Sunday's game, I dressed up the platter with a little 49er's red.
Directions 
 
1. Preheat the oven to 350 degrees. 
 
2. combine the flour, baking powder, baking soda, and salt. 
 
3. In a large bowl, cream the vegetable shortening and two sugars. Beat in the eggs. Beat in the milk and vanilla extract. Gradually blend in the dry ingredients. Fold in the oats and chocolate chips.  
 
4. Drop the dough by spoonfuls 1 1/2 inches apart onto ungreased baking sheets.  
 
5. Bake for 10 to 12 min., until lightly colored. Transfer to wire racks to cool. *We use parchment paper on all of our cookie sheets and then just transfer the paper to the counter to cool.  
 
Baking notes: 
You can use semisweet chocolate chips, milk chocolate, or butterscotch chips. If making these for kids, omit the chips and press several M & M's into the top of each cookie.
