Whip It Up Wednesday, Greek Grilled Chicken Salad

Here I thought I would be blogging more with being off. The truth this week is that I have caught some sort of summer cold and it has really put me back, which is so frustrating!  
Here is a recipe we actually tried a few weeks ago and I snapped a final image with my iphone. I was so engrossed in making the food, that I forgot to run up and grab my "big girl" camera.  
"This one is a keeper" as David says. The recipe is from a fantastic cookbook, Cooking Light Superfast Suppers!  
Greek Grilled Chicken Salad 
Serving Size : 4  
Preparation Time 14 minutes 
12 oz romaine lettuce -- chopped (we used the mixed greens from Costco) 
12 oz cooked chicken breast halves -- 2-6 oz packages, refrigerated grilled chicken strips 
2 c grape tomatoes -- halved 
3/4 c cucumber -- seeded and chopped 
1/3 c low-fat feta cheese 
2 tbsp black olives -- sliced (we used greek kalmata olives)  
1/4 c red onion -- thinly sliced 
1/4 tsp ground black pepper 
1/4 c reduced fat olive oil vinaigrette 
1 tbsp lemon juice -- freshly squeezed 
Combine first 8 ingredients; toss gently. Combine vinaigrette and lemon juice in a small bowl with a whisk. Pour dressing over lettuce mixture; toss gently. 
Serving size: 3 1/3 cups
