Whip It Up Wednesday, Broccoli Salad

Maybe you are thinking that we have been eating out every night for the past few months because there haven't been any Whip It Up Wednesday entries. Well, we haven't been eating out, we have been busy! So busy that by the time we get home, we just want to crash and eat an apple. Seriously! If you read my last post, you saw that I am leaving my full time job in a few weeks, so this blog is bound for a multitude of goodies to be made and posted, of which, I plan to make myself! Those 40+ cookbooks on the bookcase in the kitchen are just calling my name!

For Easter, we were given the task of bringing a Broccoli Salad. My Mom said she had a recipe for me to use, but instead, I wanted to make my co-worker, Kelli's recipe. No offense Mom, I really liked her salad and wanted to surprise you with how good it is. David was a little skeptical about this recipe because he being the cook and all, just couldn't fathom how all of these ingredients together would taste that good.

Here is our Easter Broccoli Salad
Ingredients

2 heads Broccoli, chopped (flowerets only)
2 cups red grapes
1 cup raisins
1 cup celery
1/2 cup slivered almonds (toasted)

1 cup mayonnaise
1/2 cup sugar
1 tsp vinegar
green onions to taste (some broccoli salads call for red onions)
1 lb bacon, fried and broken into small pieces

Directions

Mix broccoli, grapes, raisins, celery and green onions. In a bowl mix mayonnaise, sugar and vinegar. Toss this dressing into your salad. Top with slivered almonds and bacon just before serving. Enjoy!

Good thing I doubled the recipe! Everyone loved it, even David! And a special thank you to Kelli for this yummy recipe!
