Whip It Up Wednesday: Refreshing Lime Cole Slaw

Last week, I hosted my Bunco group and we had Cole Slaw, roasted chicken, and homemade mashed potatoes. The ladies went CRAZY for this Cole Slaw and there was hardly any left. Seriously, I think some had second and third helpings. It's that good! So, if you have been to Houston's, you have possibly had their amazing Cole Slaw. Our family goes to Houston's at least twice a year for special occasions and walk out of their completely satisfied and then baffled as to how they make that awesome Cole Slaw. Personally, I am not a huge fan of Cole Slaw, as it has to be prepared just right. Sometimes, it is too dry, or too moist and doesn't have a whole lot of flavor. Look no further, we have the closet thing to Houston's Cole Slaw and it is super easy and cheap to make!
2 Carrots, grated 
8 Cups of Cabbage, chopped 
4 Scallions 
1 Bunch of Water Cress, chopped (2 cups and no stems) 
1 1/2 T of Cider Vinegar 
1 t Worcestershire Sauce (1st magic ingredient) 
1 t Kosher Salt 
3 t Sugar 
1 Lime, zest (2nd magic ingredient) 
Juice from half of a lime 
1 t Pepper 
1 Cup of Mayonnaise  
Chop the cabbage (do not shred), water cress and scallions and set aside. Shred carrots and zest the lime then add to cabbage mix. Add all of the dry and wet ingredients (except mayonnaise) to the cabbage mix and toss. Add mayonnaise and toss until thoroughly coated and serve.  
Serves 12
